The Best Banana Bread EVER!

1/3 cup coconut oil
2/3 cup honey
1 1/2 teaspoon vanilla extract
2 eggs
4 super ripe mashed bananas (the blacker the better ;)
1 3/4 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup heavy cream, buttermilk, almond milk, water... Whatever you have!

  Directions
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt and baking soda. Add whatever liquid you're using to batter.  Spread batter into a WELL-greased (I use coconut oil and then flour it lightly, it sticks!) 9x5 inch loaf pan.
3. Bake for approx 70-75 minutes. Cool on wire rack for 1/2 hour before slicing.


Everyone so far has loved this bread!  Cooking time can vary by quite a bit, so it's probably a good idea to start checking around the 60 minute mark. 

*It is implied that all ingredients are organic, I get tired of typing it over and over. =)
